Cities I come to admire most when traveling are those I consider quirky, unique and slightly obsessive. Liège, located in the east of Belgium, is one such location. Once the crown jewel of Medieval Europe, Liège situated in the valley of the Meuse River, is quite the chic little city. It has the best of both worlds: stylish new restaurants, vibrant 16th century stained-glass church windows, and boutiques sprinkled along Liège ‘s centuries-old cobblestoned streets. Romanesque towers and fountains, sleek new digs and an indoor pool turned gallery space, together bring a palpable energy to this city of roughly 196,000. Although the streets are quite bare in the evening, you don’t feel alone among the illuminated churches, charmingly curved blocks and crisp sent of waffles wafting through the night air.
